Beef Stir Fry

We've made several stir fry recipes, and have used chicken and steak in the past.  We wanted to use frozen ground beef we had on hand, so decided to give this recipe a shot.  DJ and I loved it, but the girls weren't interested.  Luckily we keep deli meat and pb and j on hand for the nights they aren't into the meal we offer!


Beef Stir Fry
(about 6 servings)

Ingredients

   1.5 lb Lean Ground Beef or Turkey
3 cups carrots, shredded
2 cups green beans, cut
1 cup mushrooms
1/2 - 1 tbsp of Minced Garlic
1/2 to 1 Medium Onion Diced
2 tsp of olive or coconut oil
   Tamari, to taste 

Instructions

Brown ground beef/turkey with onion and drain.  While meat is cooking, prep vegetables.  When meat is cooked thoroughly, transfer to a bowl and set aside.

Cook veggies and garlic on medium heat in the olive or coconut oil to desired tenderness.  Once the veggies are cooked, add meat.   We prep on Sunday for the week, so we mixed veggies and meat together and refrigerated.  As we prepped for dinner, we heated one serving and topped with desired amount of Tamari.  It's great over brown rice as well!

Maple Mustard Chicken

We are always looking for easy crock pot recipes as a family with a hectic schedule.  I like easy crock pot recipes too; you know, the ones where you don't have to chop 15 items or pre cook the meat before you put it all in the crock pot!  Those don't really count as easy crock pot recipes for me!  

We tried a new easy crock pot recipe this week from the Foodie and the Fix, and it was a hit!  The only change we made was to take out the potatoes after they finished cooking (after step 5).  We cooled, refrigerated, and heated in the microwave for dinner Tuesday, and I topped the chicken with a mix of honey and spicy brown mustard.  I'm also skipping potatoes this week, as I'm on the ramped up nutrition plan and skipping certain carbs, so I ate with brussels sprouts and sauteed mushrooms.  




Ingredients
·         6 large red potatoes, cut into 1/2" - 3/4" cubes
·         1/3 cup spicy brown mustard
·         1 Tbs maple syrup
·         2 lbs chicken breasts, trimmed
·         salt and pepper, to season

Maple-Mustard Sauce
·         1/2 cup spicy brown mustard
·         1/4 cup maple syrup

Instructions
1.      In a small bowl, stir together 1/3 cup mustard and 1 tablespoon maple syrup, set aside.
2.      Add the potatoes to your slow cooker, then drizzle with half of the maple-mustard mixture.
3.      Lightly season the chicken with salt and pepper on both sides then place on top of the potatoes, drizzling with the remaining maple-mustard mixture.
4.      Cover and cook on low for 4 - 4 1/2 hours or until the chicken is cooked through. Remove chicken, let cool a few minutes then refrigerate.
5.      Your potatoes won't yet be fully cooked. Give them a stir and crank the slow-cooker up to high for another 2 hours or until they're cooked through.
6.      Meanwhile, stir together 1/2 cup mustard with 1/4 cup maple syrup and set aside. When ready to serve, warm in the microwave.

7.      Once the potatoes have fully cooked, you can either throw the chicken back into the slow-cooker to heat it through or you can heat it in the microwave. When chicken is hot, let it rest for a couple of minutes, then slice and serve with the potatoes and the warmed Maple-Mustard Sauce.

Sloppy Joes

One of my favorite meals as a child was Sloppy Joes.  I haven't been able to find a homemade recipe I was really crazy about until recently.  We played with a few recipes, and ended up with the below - and thankfully everyone loved it!!  We eat on top of potatoes and the girls use wheat rolls, however, one of my recent challengers shared their house fave was over brown rice.  



Sloppy Joes


(about 8 servings)

2 tsp olive oil
1 medium onion, chopped
1 medium red bell pepper, chopped
4 cloves garlic, chopped
2 lbs raw ground 93% lean ground beef or turkey breast
1/2 tsp sea salt (or Himalayan salt)
1/2 tsp ground black pepper
3 cups tomato sauce
2 tsp Worcestershire sauce
6 tbsp all natural tomato paste
2 tbsp pure maple syrup (or raw honey)

1. Heat oil in large skillet over medium heat.
2. Add onion and bell pepper; cook, stirring frequently, for 4 to 5 minutes, or until onion is translucent.
3. Add garlic; cook, stirring frequently, for 1 minute. Transfer onion mixture to a medium bowl. Set aside.
4. Add turkey to the same skillet; cook, over medium heat, stirring frequently to break up the turkey, for 8 to 10 minutes, or until the turkey is no longer pink.
5. Season with salt and pepper.
6. Add onion mixture, tomato sauce, Worcestershire sauce, tomato paste, and maple syrup. Mix well. Reduce heat to medium low; gently boil, stirring occasionally, for 15 to 20 minutes, or until sauce has thickened.


Serve Turkey Sloppy Joes open faced on top of baked potato, over 1 cup zucchini noodles, or over cooked whole wheat pasta, quinoa, or brown rice.

Taco Zucchini Boats


We LOVE Mexican food, and we have tacos on a pretty regular basis.  We also like to change things up a bit though, so tried a new recipe this weekend.  I'm a big fan of pretty much any recipe with taco meat and cheese, so these are a new favorite of mine!

Taco Zucchini Boats

6 servings
  1. 6 medium zucchini, cut in half lengthwise
  2. 1/3 cup salsa
  3. 1.5 pounds lean ground turkey
  4. 1.5 teaspoon chili powder
  5. 1.5 tablespoon garlic powder
  6. 1.5 teaspoon cumin
  7. 1.5 teaspoon paprika
  8. 3/4 teaspoon oregano
  9. 3/4 teaspoon sea salt
  10. 6 ounces no sugar added tomato sauce
  11. 1/3 cup water
  12. Cheddar cheese, shredded
  13. Cilantro, chopped and/or green onions for garnish (optional)

Instructions
  1. Preheat oven to 400F. Spray a 9" x 13” casserole dish with olive oil then set aside. Slice each zucchini in half lengthwise. Using a spoon, hollow out the center of each zucchini. Chop the scooped out zucchini flesh and save 1/2 cup to add to the taco filling (squeeze excess water with a paper towel,) discarding the rest.
  2. Brown turkey in a large skillet, breaking up as it cooks. When no longer pink, add the chili powder, garlic powder, cumin, paprika, oregano, and salt and mix well.
  3. Add the reserved zucchini, tomato sauce, salsa, and water. Stir and simmer on low for 15 minutes.
  4. Fill each zucchini boat with 1/2 a red container of meat mixture, and top each with half of a blue container of shredded cheddar.  
  5. Cover with foil and bake for 35 minutes, until cheese is melted and zucchini is cooked through. Top with cilantro and/or green onions if desired. Serve 2 zucchini boats for each person.

Southwest Chicken and Black Bean Salad


Another fave recipe from week one of our newest program was this southwest salad.  I just tell you, I wasn't sure how I was going to like it just reading the recipe, but this was amazing!  My hubby said he could eat this over and over, and a hubby's approval on a recipe is key around our house!  Enjoy!!



Southwest Chicken and Black Bean Salad (Shift Shop Recipe Booklet)
Makes 4 servings

3 Tbsp. balsamic vinegar
2 Tbsp. fresh lemon juice
½ tsp. lemon pepper
1 Tbsp. + 1 tsp. extra-virgin olive oil
2 cups black beans
3 cups sliced orange bell peppers
3 cups sliced red bell peppers
1 cup thinly sliced red onion
2 cups chopped tomatoes
3 cups sliced grilled chicken breast
½ cup shredded sharp cheddar cheese
1 cup fresh cilantro, chopped

1. To make dressing, combine vinegar, lemon juice, and lemon pepper in a medium bowl; whisk to blend.
2. Slowly add oil while whisking; mix well. Evenly divide dressing between 4 one-quart Mason jars. Set aside.
3. Evenly layer beans, bell peppers, onion, tomatoes, chicken, cheese, and cilantro on top of dressing in jars.
4. Serve immediately or cover and refrigerate for up to 3 days. Shake before serving.

Slow Cooker Beef Chili

My hubby thought I was a little crazy when I added a chili recipe to our weekly meal plan in the middle of July, but he ended up loving this recipe!!  My oldest daughter loved it as well, but the other two didn't want to even try it.  I didn't force the issue because I selfishly wanted enough chili for myself - ha!!

When we started week one of our new program, we received a nutrition guide and recipe booklet, and the chili is week one approved recipe.  The program is a fitness and nutrition ramp up program, so each week you increase the length of workouts and adjust carbs/protein/veggie intake.  I had to go with the chili week one because beans aren't allowed the next two weeks.  We'll be making this again this fall!!



Slow Cooker Beef Chili (Shift Shop Recipe Booklet)

1 Tbsp. olive oil
1½ lbs. raw extra lean beef chuck, cut into bite-sized pieces
1 medium onion, chopped
1 medium green bell pepper, chopped
2 cloves garlic, finely chopped
1 (15-oz.) can diced tomatoes, no salt added ¼ cup tomato paste, no sugar added
2 Tbsp. chili powder
¾ tsp. sea salt (or Himalayan salt)
½ tsp. ground black pepper

1 (15-oz.) can kidney beans, drained, rinsed
1. Heat oil in medium nonstick skillet over high heat.
2. Add beef; cook, stirring frequently, for 4 to 5 minutes, or until browned. Reduce heat to medium-high. 3. Add onion and bell pepper; cook, stirring frequently, for 3 to 4 minutes.
4. Add garlic; cook, stirring frequently, for 1 minute.
5. Place beef mixture in a 3-quart slow cooker.
6. Add tomatoes, tomato paste, chili powder, salt, and pepper. Mix well; cover. Cook on high for 3 hours.

7. Add beans; cover. Cook for 1 to 1½ hours, or until beef is tender.

Marinated Summer Veggies and Chicken Sausage

Wow, I didn't even realize how long it's been since I've shared recipes on the blog!  I've been creating detailed meal plans each week, and I've included recipes and grocery lists with each meal plan for our family and my groups.  It's been such an easy way to keep track of recipes, that I've let my blog fall to the way side!  I've had a few friends request recipes lately though, so decided I need to start putting more effort into the blog.  I'll be posting several recipes over the next few weeks, many of which we have tried for the first time along side the new athletic/agility training program I've been following.  You definitely will not feel deprived when you add these recipes to your weekly meals!  

The first recipe is one we found on the team beachbody webiste, and it's a favorite in our house and among the members of my groups!  




Ingredients
·         2 tsp . olive oil
·         2 Tbsp . balsamic vinegar
·         2 Tbsp . fresh lime juice
·         2 cloves garlic , chopped
·         Sea salt (or Himalayan salt) and ground black pepper (to taste; optional)
·         1 lb . green beans , ends removed
·         2 medium zucchini , sliced
·         2 medium summer (crookneck) squash, sliced
·         1 cup halved cherry tomatoes
·         1 medium green bell pepper , sliced
·         1 medium red onion , sliced
·         4 cooked chicken sausages , sliced
·         2 Tbsp . chopped fresh basil
Instructions
1.   To make marinade, combine oil, vinegar, lime juice, and garlic in a medium bowl; whisk to blend.
2.   Season with salt and pepper, if desired; whisk to blend. Set aside.
3.   Place green beans, zucchini, summer squash, tomatoes, bell pepper, and onion in a re-sealable plastic bag (or large bowl). Add marinade; shake to blend. Let sit for 30 minutes.
4.   Preheat grill or broiler to high.
5.   Place veggie mixture on a large sheet pan (or broiler pan). Add sausages; mix well. Spread out evenly.
6.   Grill or broil for 4 to 8 minutes, turning occasionally, until vegetables begin to soften.
7.   Sprinkle with basil before serving.

Chocolate Peanut Lara Bars

Warning, when you make these, you may (WILL) be tempted to eat the entire pan in one sitting!!!  It took a lot of self control to limit my portions!  Still really glad DJ ran across this recipe from thekitchn.com, as it beats a prepackaged candy bar any day!!



1 1/2 cups unsalted peanuts
1 1/2 cups pitted, dried dates
1/4 tsp salt
1 cup roughly chopped dark chocolate

Line an 8-inch x 8-inch baking pan with parchment paper leaving the ends of the paper hanging over the edge.

Combine the peanuts, pitted dates, and salt in the bowl of a food processor. Pulse 5 to 6 times to break up the ingredients. Remove the lid and break apart any clumps of dates. Replace the lid and process continuously for 1 to 1 1/2 minutes until the ingredients begin to clump together. When you remove the lid, the ingredients may still look a little crumbly (like couscous), but should hold together when pressed in your fist.

Sprinkle 1/2 cup of the chocolate over the peanut-date mixture (reserve the rest of the chocolate). Replace the lid and pulse just 3 or 4 times to incorporate the chocolate.

Transfer the mixture to the baking dish and press it firmly down with the palm of your hand or the bottom of a drinking cup. Melt the remaining 1/2 cup of chocolate chips in 15-second bursts in the microwave, stirring between each burst. Pour the melted chocolate over the bars and use a spatula to spread it into an even layer.

Cover the bars and refrigerate for at least an hour or overnight, until the bars are firm and the chocolate is set. With the bars still in the dish, use a sharp knife to cut them into 15 bars. Bars can be stored in the dish or individually wrapped. Keep refrigerated for firmer texture or unrefrigerated for a softer texture. Bars will keep for about a month refrigerated or for about a week if unrefrigerated.

Paleo Buffalo Chicken Tenders

Last night I went to pick the girls up from a play date, and came home to these buffalo chicken tenders!!  The picture does not do them justice!  These were great on their own, but would also be great in a wrap or on a salad.  And they are perfect if you are looking for a treat for the upcoming Super Bowl!  

Ingredients:
2 lbs Chicken Tenders

1 cup coconut flour
1 tsp garlic powder
1 tsp onion powder
1 tsp chili powder
1 tsp oregano
1 tsp sea salt
1/4 tsp cayenne
1/4 tsp black pepper

3 eggs
1/4 cup Franks
1/4 cup grass fed butter

Preheat oven to 425.  

Mix coconut flour and seasonings in a bowl.

Whisk eggs in a separate bowl.  Dip chicken tenders in eggs.  Then dredge chicken tenders in flour mixture and place on baking sheet greased with coconut oil.  Bake tenders at 425 for 12 minutes.    .

While chicken is cooking, heat Franks and butter on stove top.  After chicken has baked 12 minutes, dip in the heated sauce/butter mixture, and place back on baking sheet.  Bake an additional 12 minutes.

Zucchini Boats

We do quite a few variations of zucchini boats, and these have ended up being a favorite!

3 zucchini
1.5 lbs lean ground beef
3 T tomato paste
1 green bell pepper
1 yellow onion
garlic powder
Italian seasoning
salt
pepper
1 cup cheddar cheese

Scoop meat out of 3 zucchini, sprinkle with salt and pepper, bake zucchini 10 minutes on 350. Meanwhile prepare filling...Filling is 1.5 lbs ground beef, 3 T tomato paste, one green bell pepper, one yellow onion, garlic powder, Italian seasoning, salt, pepper, and about 1 cup of cheddar cheese. Browned gr beef, drained, set meat aside, sauté veggies in the same pan you cooked beef in, then add meat and other ingredients (used about 3/4 cup cheese in filling). Stuff the baked zucchini and then top w remaining cheese, bake an additional 10-15 minutes. 
    21 day fixers - We counted one zucchini boat as 1/2 red, one green, 1/2 blue.

Chicken with Asparagus

We found a similar recipes online, and knew we would love this variation of chicken and veggies.  Lucky for us, two of the girls are huge fans too!  Definitely adding this to our regular rotation, and subbing veggies depending on what we have on hand.  

          5 Boneless, skinless Chicken Breasts
          Asparagus Spears, 4 -5 in each chicken breast
          Mozzarella Cheese
          Tomato, 1 large
      Red Onion, thinly sliced
          1 tsp Paprika
          1 tsp Onion Powder
          1 tsp Garlic Powder
          ½ cup Whole Wheat Bread Crumbs

Cut ends off the asparagus and toss in olive oil, paprika, coating well.
Butterfly the chicken by slicing a deep cut from the top to bottom. Stuff each breast with tomato slices, red onion, cheese, and asparagus. Close chicken and season the top with onion, garlic powder, and bread crumbs

Over medium-high heat, grill the chicken on the top rack until cooked

Crock Pot Chicken Philly

It's been really cold lately, and DJ wanted a weather appropriate meal tonight.  We tried this recipe for the first time tonight, and it was perfect!!


Crock Pot Chiken Philly
2 T coconut oil or butter
3 bell peppers, thinly sliced
1 large yellow onion, thinly sliced
3 chicken breasts, thinly sliced
2 cloves garlic, minced

½ T sea salt
2 T below seasoning mix (or Montreal Steak Seasoning)
Provolone cheese
Banana peppers, optional topping

Place coconut oil at bottom of crock pot.  Place bell pepper and yellow onion over coconut oil. 

Place chicken, garlic, sea salt, and seasoning in bowl and toss chicken.  Place seasoned chicken in crock pot on top of onion and peppers.  Cook on low 3 hours, mix chicken and veggies.  Cook another 2 – 3 hours.  Drain juice and place cheese on top to melt.  

Seasoning Mix
  1. 2 T paprika
    2 T black pepper
    2 T sea salt
    1 T garlic powder
    1 T onion powder
    1 T cumin
    1 T corriander
    1 T dill
    1 tsp crushed red pepper flakes

Pumpkin chocolate chip muffins

This weekend Riley and I played with one of our favorite recipes to make our first batch of pumpkin muffins this fall.  We love how they turned out!!

 - 1 cup pumpkin puree
 - 2 large eggs
 - 1 cup plain greek yogurt
 - 2 cups oats
 - 3 T honey
 - 1 1/2 tsp baking powder
 - 1/2 tsp baking soda
 - 1/2 tsp vanilla extract
 - 1 1/2 tsp cinnamon
 - 1 tsp nutmeg
 - 1/8 tsp ground cloves
 - 1/8 tsp salt
 - 1 cup chocolate chips

Preheat oven to 400 degrees.

Grease muffin tin, or line with lightly greased muffin liners.

Place all ingredients except for chocolate chips in blender.  Blend on high for several minutes, until oats have broken down.  Once batter is blended well, stir in chocolate chips by hand.  Fill muffin cups with batter.  Bake about 15 minutes, until tops are set and toothpick inserted in center comes out clean.  Cool muffins on wire rack.

Burrito Bowl

New recipe this week for lunch - Chicken Burrito Bowls!!  I have a new accountability group starting today, so we wanted at least one new recipe for the week.  This one was great, so happy to have another to add to our rotation!  One of the great benefits to running the accountability groups is that they push me to not only focus on my workouts, but I end up looking for new recipes for challengers and find great ideas for our meals too!

Here's our recipe:

shredded chicken (see recipe below)
black beans (canned, rinsed and drained, or crock pot recipe here)
brown rice - cooked according to package instructions
shredded romaine lettuce
salsa - store bought or recipe below
cilantro, chopped
green onion, diced
grape tomato, halved
greek yogurt (optional)
avocado (optional)


Shredded Chicken in Crock Pot
4 chicken breasts
2 limes
cumin
garlic powder
salt
pepper
 -  Place 4 chicken breasts in crock pot.  Squeeze juice of two limes over chicken.  Sprinkle with cumin, garlic powder, salt, and pepper.  Cook on low for 4 - 5 hours.  Shred chicken in crock pot.

Salsa
2 cans rotel with lime and green chiles
2 cans fire roasted tomato, salsa style
1/2 jalapeno
1/3 bunch of cilantro
1 tsp garlic salt
 - Place all ingredients in a blender and blend until smooth.  Makes a large batch of salsa, so either half the recipe or plan to use in another recipe for the week.  We love using the salsa as salad dressing!

Place almost a full green container of shredded romaine in a bowl, top with 1 red container of chicken, 1 yellow of rice/beans, add other toppings as desired (salsa, cilantro, green onion, grape tomato, greek yogurt, avocado).  Be sure to count your avocado as your blue!  Enjoy!!

Asparagus Salad

We tried out an asparagus salad tonight, and it's going into our regular rotation!  This is a great side dish for all of your summer get together's and perfect for the Fourth!



Asparagus Salad

2 bunches of asparagus
bacon (I cooked about 12 slices, and used 1/2 a slice on my serving)
boiled eggs (I made 5 boiled eggs, and topped my serving with 1/2 of one)
one pint of grape tomatoes, halved
one yellow pepper, diced
1/4 cup red onion, diced
balsamic vinaigrette (recipe below)
sea salt, to taste

First step, cooking the bacon.  It's a personal preference, but I like my bacon crispy, especially in a salad like this one.  We buy the thick sliced bacon, and cook in the oven.  I put on a baking sheet lined with foil, and cook at 400 degrees.  I cook about 15 minutes, then flip, cooking about another 15 minutes.  Remove from sheet, place on plate lined with paper towel.

While the bacon is cooking, bring a large pot of water to a boil.  Add asparagus to boiling water, and boil 4 - 5 minutes.  Drain, and add asparagus to a bowl of ice water, letting it rest for about 20 seconds, then drain again.  While my water was boiling for the asparagus, I also put my eggs on to boil.

Chop asparagus and place in large mixing bowl.  Add all veggies, 1/3 cup of vinaigrette, sprinkle with sea salt, and mix.  Chill 30 minutes.  When serving, top with diced boiled egg and bacon pieces.

For the balsamic vinaigrette:

1/2 cup olive oil
1/4 cup balsmic vinegar
1 T diced red onion
1 T dijon mustard
1 T honey
1/4 tsp garlic
dash of salt
dash of pepper

Mix above ingredients in food processor or blender.

Fried plantains

We found a recipe years ago for pork carnitas, and the site included a recipe for fried plantains.  We had never made plantains at home, but they've become one of our favorites!  They are amazing with guacamole or as a base for a great mexican pizza, but are also good dusted with a little cinnamon and sea salt.  They are a little work, but totally worth the effort!

We look for plantains that are pretty green, and typically buy 4 for our family of 5.  Our girls love the fried plantains as much as we do, and they sneak them off the plate as I'm cooking!  The easy version - Peel the plantains, slice very thinly.  Heat coconut oil on medium high heat on the stove top.   The recipe we initially found called for more coconut oil than we prefer to use.  I start with about 2 T of oil, but I do usually need to add more oil as I'm cooking the plantains.  Cook on each side until lightly browned, a few minutes each side.  Remove from oil, sprinkle with sea salt.

My favorite way to cook them is a little more involved, but I really just love them this way!  Slice the plantains about 1.5 to 2 inches thick.  Place in preheated coconut oil.  Cook on each side until browned.  Remove from pan and place on flat surface.  Use the bottom of a glass to smash the plantain.  Once smashed, place back in pan and cook for a minute or two on each side again.  Remove from oil, sprinkle with sea salt.

Plantains count as a purple for 21 DF, so I usually skip my fruit on days we plan to eat plantains.  I also skip my tsp since you'll be cooking the plantains in coconut oil!

Paleo Coleslaw

DJ grilled ribs for Father's Day this weekend, and though ribs aren't exactly 21 day fix approved, we enjoy splurging sometimes!  We opted for a homemade coleslaw and baked asparagus as our sides to balance out our splurge.  We made the homemade mayo for the coleslaw, and I had to play around with it this time.  I added an egg yolk, as it just wasn't as thick as the last time.  We've read about adding bacon grease to the mayo as well, to give it a little flavor.  I did not go that route this time, as I thought it would be fine in the coleslaw as it was; however, if I was using the mayo on a sandwich, I might give it a shot!

Here's the recipe:

1/2 head green cabbage, chopped
1/2 head purple cabbage, chopped
2 1/2 cups shredded carrots
1/3 cup chopped green onions (add more or less depending on how strong your onions are)
1/4 cup white vinegar
1/3 cup homemade mayo
1 tsp salt
1/2 tsp black pepper
3/4 tsp dry mustard
3/4 tsp celery seed
3/4 tsp garlic powder

The hardest part of this recipe is chopping the cabbage!  It makes a pretty big mess - at least it did for me.  After chopping the cabbage, just mix all ingredients together, cover, and chill for about an hour. Enjoy!

Paleo Broccoli Salad

If you are looking for a side dish for your holiday cookout, give this broccoli salad a try!  We loved how this turned out with the paleo mayo!

2 heads broccoli, cut in small pieces
1 1/2 cups red grapes, halved
8 - 10 slices cooked bacon, crumbled
1/2 cup green onion, chopped
1 1/4 cup paleo mayo
Salt and pepper to taste

Paleo mayo:
2 egg yolks
1 tsp mustard
1/4 tsp salt
1/4 cup olive oil
1/2 cup coconut oil, melted

Place yolks, mustard, and salt in food processor and mix.  Begin adding a little bit of oil slowly, on low speed.  Continue adding oils slowly, and the mixture should begin to thicken.

The mayo is the only step of the recipe that requires any time.  The rest of the prep is just mixing the broccoli, grapes, bacon, green onion, mayo, salt, and pepper!

Crockpot Zucchini

Another super easy recipe!  We love crock pot recipes, and this one is an easy but great option!


2 lbs lean ground beef, browned and drained
1 yellow onion, diced
5 zucchini, diced
2 cans fire roasted tomatoes
1 tsp garlic powder
1 tsp onion powder
salt and pepper to taste

Place all ingredients in crock pot on low heat, cooking for 4 hours.  I love topping with greek yogurt and a little shredded cheddar cheese.

Homemade Breakfast Sausage

We finally found a great breakfast sausage recipe this weekend!  As always, a few edits, and we loved the flavor!!  If you are looking for a healthier breakfast sausage, give this one a shot!

12 oz ground turkey
1 egg, beaten
1/3 cup finely chopped red onion
1 1/2 tsp rosemary
3/4 tsp black pepper
1/2 tsp sage
1 dash sea salt
coconut oil (for greasing pan)

Combine all ingredients in a large bowl.  Grease pan with coconut oil, and heat pan on medium high.  Form small patties, and place in heated pan.  Cook until well done, about 4 minutes on each side.

We ate a slice of toasted ezekiel bread and two fried eggs with ours for breakfast both mornings this weekend!
